Soft, pink colored champagne with abundant, fine bubbles. Aromas of red fruits dominated by wild strawberry and cherry, and the typical peppery note of Pinot Noir. The palate mirrors the nose with strawberry and raspberry flavours, leading into notes of freshly baked viennoisseries and a morello cherry finish. Ideal pairings include red meats, roast beef with foie gras, tarte tatin. The addition of still pinot noir from Bouzy (12 percent) gives this wine a vinous character, deepening its raspberry freshness without diminishing the gingery feel of the mousse. It’s a clean wine with structure and stamina, a lovely match for duck confit. Mouthwatering and harmonious, this is lightly chalky in texture, with a zesty layer of pink grapefruit peel, ground ginger and spicy mineral underscoring the white peach and blanched almond flavors.
